How does freeze-drying work?
It goes through a process called Sublimation! The trays in the machine freeze to -40 degrees fahrenheit. Then while they slowly heat up, ALL the moisture is removed from the product.
Why do they look like that?
While they’re drying they’re encapsulated in a vacuum chamber. While they’re drying, the air defuses into the product and it makes them all big and puffy!
